I used homemade Szechwan Chutney with Noodles-Rice and my lunch was made. I wanted that extra bit of spice and Szechwan Chutney mixed into Noodle-Rice was the answer.
Ingredients and spices that need to be Make ready to make Szechwan Noodle Rice:
- For Schezwan Chutney sauce
- 10-12 Kashmiri Whole red chillies
- 5-6 garlic cloves
- 1/4 cup oil
- 1/2 inch ginger chopped
- 1/2 Tbsp vinegar
- 2 Tbsp Tomato ketchup
- as per taste Salt
- For Rice-Noodles
- 1 cup Basmati Rice cooked
- 1 cup noodles boiled
- 1/2 tbsp ginger chopped
- 2-3 garlic cloves chopped
- 1 medium carrot chopped into 1/4” cubes
- 3-4 beans chopped fine
- 1 medium size green capsicum sliced
- 1 sprig green onions chopped
- 2-3 green chillies chopped
- 1/4 cup Szechwan Chutney sauce
- 1/2 Tbsp soya sauce
- 1/2 tsp black pepper powder
- 1 tsp sugar
- as required Oil
- as per taste Salt
- For garnish
- as required Fried noodles
- As required Green onions chopped fine
Instructions to make to make Szechwan Noodle Rice
- For Szechwan Chutney sauce - soak Kashmiri Red chillies in water with garlic for 30 mins. Strain and make a paste in a blender
- In a wok heat oil, add ginger, add paste, add vinegar, add tomato ketchup, salt. Mix very well for 3-4 mins. The Szechwan Chutney paste is ready to use
- For Rice- Noodles - in a bowl boil water and add rice. Cook until 80% done and set aside. Drain and add oil and put in the refrigerator for 30 mins.
- Boil noodles and drain and set aside. When cooled a little break the noodles into small sizes and keep it ready.
- Chop vegetables and keep ready. Chop ginger and garlic, green chillies and spring onions and set aside
- In a wok heat oil and add ginger-garlic, green chillies, carrot, beans, capsicums and sauté for 2 mins. Add soya sauce, toss. Add black pepper powder, sugar, Szechwan Chutney sauce and stir well. Add rice, noodles and toss for 3-4 mins until all combined. Add salt and spring onions and toss once. Set aside
- For plating add the Rice-Noodles in a bowl, garnish with fried noodles and spring onions chopped. Enjoy
